They learned about preserving food by making and canning salsa. They chopped, boiled, peeled, and filled jars to sell locally grown "Central Lyon Salsa" to the staff. It went fast at $5 a pint with the proceeds funding future STEM (Science, Technology, Engineering, Math) projects.
